Honey
This wonderfully rich golden liquid is the miraculous product of honey bees and a naturally delicious alternative to white sugar. Although it is available throughout the year, it is an exceptional treat in the summer and fall when it has just been harvested and is at its freshest.
The fascinating process of making honey begins when the bees feast on flowers, collecting the flower nectar in their mouths. This nectar then mixes with special enzymes in the bees’ saliva, an alchemical process that turns it into honey. The bees carry the honey back to the hive where they deposit it into the cells of the hive’s walls. The fluttering of their wings provides the necessary ventilation to reduce the moisture’s content making it ready for consumption.
In addition to its reputation as Nature’s nutritive sweetener, research also indicates that honey’s unique composition makes it useful as anantimicrobial agent and antioxidant.
Raw Honey - An Anti-Bacterial, Anti-Viral, Anti-Fungal Substance
In a study involving 105 children aged 2-18 years with upper respiratory tract infections of 7 days or less and night-time coughing, a single night-time dose of buckwheat honey was an effective alternative treatment for symptomatic relief of nocturnal cough and sleep difficulty, compared to a single dose of dextromethorphan (DM).
In the time of theancient Olympics, athletes were reported to eat special foods, such as honey and dried figs, to enhance their sports performance. Recently, however, one group of researchers has investigated the use of honey as an ergogenic aid in athletes. The study involved a group of 39 weight-trained athletes, both male and female. Subjects underwent an intensive weight-lifting workout and then immediately consumed a protein supplement blended with either sugar, maltodextrin or honey as the carbohydrate source. The honey group maintained optimal blood sugar levels throughout the two hours following the workout. In addition, muscle recuperation and glycogen restoration (carbohydrates stored in muscle) was favorable in those individuals consuming the honey-protein combination.
In addition to the specific enzymes found in honey, which may help in the healing process, honey also contains antioxidants and flavonoids that may function as antibacterial agents. One antioxidant in particular, pinocembrin, which is unique to honey, is currently being studied for its antibacterial properties. One laboratory study of unpasteurized honey samples indicated the majority had antibacterial action against Staphylococcus aureus, a common bacteria found readily in our environment that can cause infections, especially in open wounds. Other reports indicate honey is effective at inhibiting Escherichia coli and Candida albicans. Darker honeys, specifically honey from buckwheat flowers, sage and tupelo, contain a greater amount of antioxidants than other honeys, and raw, unprocessed honey contains the widest variety of health-supportive substances.
The Positive Impact of the Rastafarian Diet an Individual’s Health
The Rastafarians generally follow an Ital diet- this means that it is salt-less and vegetarian- it also means natural food. Though there are many discrepancies as to whether a vegetarian and salt-less diet is healthy, this type of diet reaps a lot of benefits health wise for an individual.
• Cutting back on salt dramatically reduces blood pressure, and reduces the risk of heart disease. Harvard researchers say people on a low salt diet have a 25-30% lower chance of developing cardiovascular disease and also a reduces risk of dying by 20%

• There is increased heart health because vegetarians on average consume more nuts. These nuts contain “good” fats, such as omega-3 and omega-6. This promotes good heart health by reducing “bad” cholesterol and unclogging arteries.
• Rastafarians also enjoy increased skin health. In addition to consuming larger quantities of nuts, vegetarians tend to consume more fruits and vegetables, which are rich in essential vitamins, this leads to good skin health. Fruits and vegetables also contain high amounts of fiber, which helps flush toxins out of the body, further contributing to skin health.
• Rastafarians also enjoy increased natural consumption of antioxidants such as vitamin C, vitamin E, beta-carotenes and phytochemicals. Antioxidants are foods that help to prevent cancer, and increase your heart health.
• The Rastafarian diets are beneficial in the prevention and treatment of certain diseases, such as cardiovascular disease, hypertension, diabetes, cancer, osteoporosis, renal disease and dementia, as well as gallstones and rheumatoid arthritis.
• Rastafarians seem to have a lower risk of obesity, diabetes mellitus and some forms of cancer.
• Cholesterol, which is recognized as primary risk factor in heart disease is lower in vegetarian diet
Olives are harvested in September but available year round to make a zesty addition to salads, meat and poultry dishes and, of course, pizza.
Olives cannot be eaten right off of the tree; they require special processing to reduce their intrinsic bitterness. These processing methods vary with the olive variety, region where they are cultivated and the desired taste, texture and color. Some olives are picked green and unripe, while others are allowed to fully ripen on the tree to a black color. Yet, not all of the black olives available begin with a black color. Some processing methods expose unripe greens olives to the air, and the subsequent oxidation turns them a dark color. In addition to the original color of the olive, the color is affected by fermentation and/or curing in oil, water, brine or salt.
Olives are concentrated in monounsaturated fats and a good source of vitamin E. Because monounsaturated fats are less easily damaged than polyunsaturated fats, it’s good to have some in our cells’ outer membranes and other cell structures that contain fats, such as the membranes that surround the cell’s DNA and each of its energy-producing mitochondria. The stability of monounsaturated fats translates into a protective effect on the cell that, especially when combined with the antioxidant protection offered by vitamin E, can lower the risk of damage and inflammation. In addition to vitamin E, olives contain a variety of beneficial active phytonutrient compounds including polyphenols and flavonoids, which also appear to have significant anti-inflammatory properties.
Cellular Protection Against Free Radicals
Vitamin E is the body’s primary fat-soluble antioxidant. It goes after and directly neutralizes free radicals in all the fat-rich areas of the body. In combination, stable monounsaturated fats and vitamin E add a significant safety factor to cellular processes like energy production, a process that generates free radicals even when things are running smoothly.
When cellular processes such as mitochondrial energy production are not well protected, the free radicals produced can interact with and damage any nearby molecules-a process called oxidation. When a cell’s mitochondria become damaged, the cell cannot produce enough energy to supply its needs and dies. If a cell’s DNA becomes damaged, the cell may mutate and become cancerous.
Protection From Heart Disease
Free radical damage can lead to numerous ailments. For example, when free radicals cause the oxidation of cholesterol, the oxidized cholesterol damages blood vessels and builds up in arteries, and can eventually lead to heart attack or stroke. So, by preventing the oxidation of cholesterol, the nutrients in olives help to prevent heart disease.
Support Gastrointestinal Health
If free radicals damage the cellular DNA in colon cells, the cells can mutate into cancer cells. By neutralizing free radicals, the nutrients in olives help prevent colon cancer. A higher intake of both vitamin E and the monounsaturated fats in olives is actually associated with lower rates of colon cancer.
Beneficial Anti-Inflammatory Effects
The anti-inflammatory actions of the monounsaturated fats, vitamin E and polyphenols in olives may also help reduce the severity of asthma, osteoarthritis, and rheumatoid arthritis, three conditions where most of the damage is caused by high levels of free radicals. The vitamin E in olives may even help to reduce the frequency and/or intensity of hot flashes in women going through menopause.
All About Porridge (aka congee, polenta, shugo, okayu, uji, nasi lemak, dalia, chao bo, lugaw, mush, farina, etc)
I’ve been trying to perfect a oatmeal congee over the past few weeks. In the process learned a lot about the different types of porridge.
How to define porridge? I think this site says it best …
http://www.thenewhomemaker.com/beautifulporridge
“Just about any grain makes a good porridge. The key is to cook them longer than you would were you to serve the same grain for dinner, and in more water”
Wiki has a pretty good list of porridge across different cultures, using different grains. I might disupte some of them. I think atole is more of a corn gruel rather than porridge.
http://en.wikipedia.org/wiki/Porridge
Even better is this article from the SF Chronicle which has a few recipes at the end.
Morning comfort / From Irish oatmeal to Chinese congee to Mexican champurrado every cuisine offers steaming bowls of cereal to stave off winter’s chill
http://articles.sfgate.com/2005-01-05/food/17355457_1_rice-grains-coconut-milk
The writer says ” just about every culture around the world has its own version of porridge and many are far from bland. They’re perked up with fiery chiles pungent fish sauce sweet fruit preserves; enriched with coconut milk chocolate or cream; or bathed in broths of saffron or ginger.”
There was a good topic on Chowhound about three years ago that focused on Asian porridge
jook (congee), okayu, porridge, gruel
http://chowhound.chow.com/topics/361590
I finally perfected my oatmeal congee.
http://chowhound.chow.com/topics/678922
I suppose I could call it porridge, but these days that usually means a sweet breakfast dish, especially when using oats. Also, I was going more for the texture and flavor of rice congee. I think, and I might be wrong, that oats have a little more nutritional value that rice.

The health benefits of coconut oil include hair care, skin care, stress relief, maintaining cholesterol levels, weight loss, increased immunity, proper digestion and metabolism, relief from kidney problems, heart diseases, high blood pressure, diabetes, HIV and cancer, dental care, and bone strength. These benefits of coconut oil can be attributed to the presence of lauric acid, capric acid and caprylic acid, and its properties such as antimicrobial, antioxidant, antifungal, antibacterial, soothing, etc.
The human body converts lauric acid into monolaurin which is claimed to help in dealing with viruses and bacteria causing diseases such as herpes, influenza, cytomegalovirus, and even HIV. It helps in fighting harmful bacteria such as listeria monocytogenes and heliobacter pylori, and harmful protozoa such as giardia lamblia. As a result of these various health benefits of coconut oil, though its exact mechanism of action was unknown, it has been extensively used in Ayurveda, the traditional Indian medicinal system.
Coconut oil is often preferred by athletes and body builders and by those who are dieting. The reason behind this being that coconut oil contains lesser calories than other oils, its fat content is easily converted into energy and it does not lead to accumulation of fat in the heart and arteries. Coconut oil helps in boosting energy and endurance, and enhances the performance of athletes.
Composition: Coconut oil consists of more than ninety percent of saturated fats (Don’t panic! First read to the last word. Your opinion may change), with traces of few unsaturated fatty acids, such as monounsaturated fatty acids and polyunsaturated fatty acids. Virgin Coconut Oil is no different from this. Let us have a bit detailed study of this.
THE magic mushroom season is fast approaching, and it will bring with it the annual phenomenon of people behaving very strangely indeed to the bafflement of others who may not realise that the “mushies” annual ritualistic celebrations are upon us.
Strangely, while they have become a Class A drug in the UK as of July 2005, magic mushrooms are still legal in Ireland. The prison sentence for possession and distribution in the UK is now similar to that for LSD, heroin, cocaine and crack.
This ban covers all mushrooms containing the hallucinogen psilocybin. In Ireland, only possession of processed magic mushrooms with intent to supply is illegal. Raw “mushies” can be picked legally, up the Wicklow Mountains and, interestingly, at the Pope’s Cross in Phoenix Park.
Magic mushrooms have been a subculture in the Irish way of life for centuries. The great magic mushrooms grow in wet, well-manured areas especially in fields with sheep. There are around 74 known varieties. Liberty Caps are the most common type found naturally in Irish fields.
They produce a similar effect to LSD but the “trip” tends to be milder and shorter. The danger is that one might make the mistake of picking the wrong kind, which in some cases can be fatal.
However, Liberty Caps, prevalent in Ireland are safe, in that there are no poisonous species that look similar to them. They grow to heights of between 5cm and 15cm tall and are dark brown with a nipple shape on the top of the cap.

Recreational doses range from 10-50 grams when wet and 1-5 grams when dry. They can be eaten raw, cooked or brewed as tea. The onset of a “trip” can start from as soon as 30 minutes or take as long as a couple of hours.
It is never a good idea to take mushrooms for negative reasons: to escape from unpleasantness, or when one is unhappy, angry or depressed, as this brings on bad trips. Magic mushrooms work to amplify the feeling that a person is experiencing at the time.
They are often associated with curiosity and adventure, bringing on a new sense of reality. As the effects intensify, a wide variety of perceptual changes may occur. Mental stimulation induces open and closed eye visions of colours and patterns, pupil dilation and rapid heart rate.
A feeling of attaining insight gradually builds up, often leading to hallucinations. Sounds, light, visuals and sensations are greatly enhanced. Many have found the experience rather like Alice in Wonderland, with ever-changing scenes and a surprise around every corner.
once a “trip” starts it cannot be stopped until a natural “come down” takes place. It can take between three and eight hours for the full effects to disappear. Nausea and stomach cramps can also occur as a side-effect.
Vomiting will expel the toxins and help a person to regain normality. There are no known serious long-term side-effects associated with magic mushrooms. Besides the possibility of poisoning if wrong mushrooms are ingested, studies have found that a person with an average weight of 130 pounds must ingest 13 grams of pure psilocybin in order to die from it. That translates to about a kilo or more of mushrooms, which is virtually impossible to eat.
Magic mushrooms don’t encourage addiction either, as tolerance builds up very quickly and the intensity of the effects diminishes
In any case, at a high dosage, a psychosis effect might occur. The one thing to remember is that all effects, both good and bad, fade away once the “trip” is over and the toxins are eliminated.
Magic mushrooms contain the active substances psilocin and psilocybin that possess the famous psychedelic qualities.
Psilocybin stays in the body for about a week. After that, neither urine nor blood tests will be able to detect the chemical.
Nutritionists and medical researchers say that if there’s only one fruit you can have it’s best to make it a banana. That’s because a banana is naturally fat-free, contains vitamins and minerals, has a lot of fiber, tastes good, and is a great source of energy. Plus, it is one of the cleanest fruits due to its naturally protective feel.
Bananas contain the highest level of starch and dietary fiber among other fruits. That’s why even a single banana can give a feeling of fullness, a great help if you are weight conscious. What more can you ask from a fruit that’s fat-free, sodium-free, cholesterol free yet so satisfying?
The fiber content of bananas also make it “Nature’s Digestive Calmant.” Bananas are calmants because they help relieve the effects of stress such as peptic ulcer by protecting the stomach walls.
Bananas contain more digestible carbohydrates than any other fruit. The advantage is, your body burns off more calories from carbohydrates quickly and easily than calories from protein or fat- giving you a high metabolic rate. What’s more, bananas also make a great post-exercise snack because it replaces lost vitamins and minerals during a strenuous activity. That’s why most athletes prefer bananas than any fruit as their snack during a game break.
Bananas also contain the highest level of potassium among other fruits. This mineral helps minimize the risk of stroke by reducing blood pressure. This mineral is also considered as a primary “brain food” because it is needed in the proper function of the nervous system. Aside from potassium, bananas also contain the highest level of vitamin B6 (Pyridoxine).

From yesterday…
Until the 18th century, the eggplant was looked upon in Europe as something nefarious, capable of inducing fever or epileptic fits. It was even called Solanum insanum by the great botanist and taxonomist Linnaeus before he changed it to Solanum melongena (see history.)
To today…
Eggplant is not eaten plain nor used in infusions. It can be cooked in various ways to provide medicinal properties without resorting to the rich and heavy method of cooking it in oil.
Though eggplants are not very rich in vitamins, they contain a balanced complex of microelements, pro-vitamin A, vitamins В1, В2, B6, B9, С, Р, PP, there are also biologically active substances, which have a positive effect on cardiovascular system and kidneys.
Eggplants also contain cellulose, organic acids stimulating the secretion of gastrointestinal tract and pectins which decongest the gall bladder and prevent atherosclerosis.
Due to the low content of carbohydrates, eggplants are not rich in calories and are also good for those fighting against excess weight and suffering from insular diabetes.
8 Health Benefits of Asparagus
Asparagus has so many health benefits, it should be added to the healthy diet. Asparagus is great as a detox vegetable, an anti-aging vegetable, and no surprise - an aphrodisiac, and much more.
The asparagus is a member of the lily family. It grows easily in the home garden right in the flower bed - it is a perennial and can yield a harvest for decades. Asparagus can be planted as seeds or roots any time of the year.
Here is a list of some of the health benefits of asparagus followed by a list further explaining those health benefits.
Asparagus:
1 - can detoxify our system
2 - has anti-aging functions
3 - is considered an aphrodisiac
4 - can protect against cancer
5 - reduces pain and inflammation
6 - can prevent osteoporosis and osteoarthritis
7 - reduces the risk of heart disease
8 - can help prevent birth defects
While there is every kind of supplement on the market to address these health issues, too often Americans turn to pills as a main source of nutrition. Pills should only be used as a supplement and not in the place of whole foods. For example: folic acid is highly recommended in today’s diet especially for women who may become pregnant. However, folic acid is the supplemental form of folate. Folate is naturally found in asparagus. In the interest of good health, whole foods are always recommended before supplements.
The Reasons Asparagus Keeps Us Healthy:
1 - As a detox - asparagus has 288 milligrams of potassium per cup. Potassium is known for reducing belly fat (see belly fat link below). It also contains 3 grams of fiber which cleanses the digestive system. It has virtually no natural sodium so no bloating during PMS, has no fat or cholesterol, and one cup has only 40 calories. According to a clinical dietician at UCLA Medical Center, asparagus in the ultimate in detox vegetables.
2 - For anti-aging purposes - asparagus is rich in potassium, vitamin A, and folate. It is also very high in glutathione - an amino acid compound with protent antioxidant properties; a must as an anti-aging deterrent. Glutathione (GSH) is an antioxidant that protects cells from toxins such as free radicals.
3 - As an aphrodisiac - the asparagus is considered a psycho-physiological aphrodisiac because of its shape. It is said to trigger the mind to have a physiological response. The French word for asparagus is asperge; asperge is a slang word for penis.
4 - Against cancer - asparagus in high in folate which is now known to be an important protection against cancer. Note: Folate is found naturally in leafy green vegetables, and citrus fruits. While folic acid is said to be the same as folate, folic acid is the supplemental form. It is always recommeded that you get health benefits from eating healthy whole foods.
5 - Reducing pain and inflammation - it is the folate that helps reduce inflammation.
6 - Preventing osteoporosis and osteoarthritis - asparagus has vitamin K which studies have shown can help prevent osteoporosis and osteoarthritis. Vitamin K aids in bone formation and repair. It is also necessary for the synthesis of osteocalcin. Osteocalcin is the protein in bone tissue on which calcium crystallizes. Asparagus has been listed as the number one source of vitamin K.
7 - Reducing the risk of heart disease - it is the folate that has been shown to reduce the risk of heart disease.
8 - Preventing birth defects - getting enough folate (doctors often recommend the folic acid supplement) is especially important for women who are pregnant or plan to become pregnant. Having a folate deficiency has been correlated with increased risk of Spina Bifida (a spinal cord birth defect) and also anencephaly (a neural tube defect). Folate helps to regulate embryonic and fetal nerve cell formation and may also help to prevent premature births.
Additionally, studies have shown that the nutritional benefits of asparagus can help prevent and treat urinary tract infections and kidney stones. Overall, asparagus is rich in potassium, vitamin A, folate, glutathione, and vitamin K. It is high in fiber, has no sodium, is low in calories and has no cholesterol or fat.
You may notice some asparagus spears are thick and some are thin. The thick ones are best for roasting or steaming. I find steaming the best and also very quick. The thin spears are ideal for the grill or if you are planning to sautee.
For optimum health benefits it is suggested that asparagus be eaten raw.
Before eating, the woody stem should be removed from both the thick spears and the thin. Peel only the thick spears before cooking.
